    • Focus area: Extension meat specialist who works with food safety and HACCP programs, 4-H & FFA meats judging, and coordinates the collegiate meats judging team.
  • Chris R. Calkins, Professor
    • Focus area: Specializes in value-based marketing, beef tenderness and palatability, meat composition, muscle characterization and value.
  • Steve J. Jones, Professor
    • Focus area: Growth and development of meat animals; protein synthesis, degradation and accretion.
  • Roger W. Mandigo, Professor
    • Focus area: Manufacturing and processing fresh meat; cured and smoked meats; emulsions, additives, thermal processing and palatability.
  • Rosie A. Nold, Associate Professor
    • Focus area: Youth oriented meat science programs; including quality assurance, 4-H & FFA meats judging and works with the collegiate Meat Animal Evaluation team.
