2008 AMSA Reciprocal Meat Conference to be Hosted by the University of Florida

Savoy, Illinois, July 31, 2007 - The 61st annual Reciprocal Meat Conference (RMC) is scheduled for June 22-25, 2008 at the University of Florida Hilton Conference Center. RMC is the annual meeting of the American Meat Science Association, a scientific professional society that creates leadership, education and professional develop opportunities.

Dr. Dwain Johnson, Professor of Animal Science at the University of Florida is serving as the host committee chair for the event. Dr. Eric Berg of North Dakota State University is chairing the program planning committee.

Technical programming for the 2008 conference will include sessions on the following topics

• Fresh Meat Quality
• Food Safety
• Processing and Ingredients
• Culinary Topics in Food Service
• Muscle & Molecular Biology
• Consumer Issues
