Based on your experience with AMSA and your knowledge of the current state of meat science and the meat industry, what do you believe is the biggest challenge facing this association?

The biggest challenge is stopping the erosion in the credibility of meat as a wholesome component of the American diet. Controversies around animal handling, harvesting practices, processing, ingredients, food safety, diet and disease have raised questions about the social value of meats in our society. AMSA needs to lead in maintaining scientific rigor as we continually expand our knowledge about muscle foods. AMSA also needs to communicate the depth of meat science expertise within the United States to those working in related disciplines such as public health, medicine, physiology, nutrition environmental science etc.

As a potential AMSA officer what would be the most important thing for the next Board of Directors to do?

The current AMSA strategic plan was completed in fall of 2006. The board of Directors should revisit it in the second half of 2008 to re-examine the priorities, affirm progress that has been made and adjust the future direction of AMSA with any needed changes.
