Pork Quality Symposia

The Pork Quality Symposia series was started at the 2000 Reciprocal Meat Conference to address the science behind pork quality attributes. A third symposia is being planned for 2002 at the RMC at Michigan State University. More program information will be available soon.

2001 - Beyond pH: Metabolic Factors Affecting Pork Quality

The 2001 symposium was presented on July 28, 2001 following the 54th Reciprocal Meat Conference of the American Meat Science Association in Indianapolis, Indiana. The symposia was sponsored by the National Pork Board.

2000 - pH and Pork Quality

This symposium was presented on June 23, 2000 following the 53rd Reciprocal Meat Conference of the American Meat Science Association in Columbus, Ohio. The symposia was sponsored by the National Pork Producers Council.
