  • Evaluation of mechanically tenderized beef and the implication for industry changes.
  • Flavor profile of grass-fed beef processed products.
  • Evaluation of pre- and post-harvest interventions for reduction of microbial load on carcasses.
  • Meat quality evaluation of hamburger meat from non-traditional grinding sources.

Dr. Luxin Wang

Focus Area:

  • Isolation and identification of zoonotic pathogens (especially, Non-O157 shiga-toxin producing Escherichia coli, E. coli O157:H7 and Salmonella) from animal raising environment.
  • Development of rapid detection techniques for zoonotic pathogens in animal products.
  • Survival and molecular survival mechanisms of E. coli O157:H7, Listeria monocytogenes and Salmonella from farm to fork.

Dr. Don Mulvaney

Focus Area:

  • Experiment station responsibilities include facilitation of assorted Frameworks for Learning programs, leadership development activities related to the Alabama Agricultural Land Grant Alliance (AALGA).
  • Research interest is in discovery of nutritional, pharmacological and endocrinological strategies for altering embryonic development of muscle tissue with intention of improving the efficiency of postnatal growth of offspring and ultimate profitability for producers
